Stainless steels are available in varieties with a wide range of properties. Some are more resistant to certain types of corrosion than others. Some are stronger than others, while others are used for their machinablity, weldability, or for cleanliness when contacting food products.

Lengthy textbooks have been written on stainless steels, but if you're looking for a quick reference that's an easy read and packed with information, I recommend an article that was published in our sister publication, Machine Design, a few years ago. It was written by Norm Ellis, an expert in the field of stainless steels.
